A Cajun sausage loaded with spices and ingredients including ancho chile powder, garlic, red pepper and gumbo filé. It is commonly used in Cajun cuisine such as gumbo and jambalaya. It is smoked on low heat for five hours with cherry wood. Each andouille ring is individually vacuum sealed and shipped in a styrofoam cooler with cold packs. I do not ship to states west of Illinois due to perishability. I have a unique, "wood-fired" method of smoking meats. The heat to cook the meat is primarily generated by the wood I use to smoke with. Most smokehouses use gas or electricity as their only heat source. Using wood as the primary heat source results in products with a richer color and corresponding flavor, along with a glossy finish.
